Project Description
This thesis is a component of the European DOMINO project titled “Leveraging the Microbial Potential of Fermented Foods for Healthy and Sustainable Food Systems” (DOI 10.1060/218). The project, led by INRAE, involves collaboration with 18 partners spanning 10 European countries.
The primary objective is to establish a synthetic ecology approach for investigating the formation of microbial communities that can ferment it, all while enhancing its sensory qualities. Fermented foods are a significant component of our diet. They harbor diverse microorganisms that enhance food preservation, impart unique flavors, and elevate nutritional content. A significant challenge in this project is guiding the development of plant-based fermented products that align with the evolving food preferences of society, the critical requirement for a sustainable food system, and the creation of a thriving economic market for small European enterprises.
Objective of Project
Phase 1: Participation in Living Labs
- Define consumer/stakeholder expectations for new fermented foods.
Phase 2: Definition of a Model Matrix Enriched with Legume Proteins
- Create a typical matrix for studying microbial community assembly.
Phase 3: Design of Synthetic Microbial Communities
- Select/design microbial communities adapted to protein-enriched matrices.
- Develop a collection of bacteria and fungi for matrix colonization.
- Generate appealing sensory functionalities during fermentation.
Phase 4: Functional and Sensory Characterization of Fermented Products
- Perform functional and sensory characterization of fermented items.

Aims of Project
- Characterize the matrix fermented by the selected microorganisms from Phase 3.
- Analyze a subset of consortia to:
- Identify and quantify sensory perceptions of fermented products (aroma, flavor, and texture).
- Investigate the origin of any defects using analytical techniques on volatile and non-volatile fractions.
- Study the potential for implantation and functional expression of microbial consortia in the matrices.

- Candidates must have an engineering degree or Master degree in microbiology/microbial ecology/microbial biochemistry with an interest in food science.
